So, when the pandemic hit and everything was shut down, we were living in Key Largo. Beautiful place to be shut down in but nothing to do but watch boats go by. SO….I started cooking. I made bagels, breads and pretzels. THEN….a light bulb went off.
Why not cook the delicious rum cakes we had experienced and make them our own. And…after several attempts and tweaks…VOILA !!! The best rum cake ever. Each cake takes 2 days to make but it well worth the wait.
Needless to say, you will get a buzz. These are made with the love and care that any islander would make for their family.
